This katsu curry is easy to make and so delicious. Perfect for meal prep and full of protein


Serves 1


Step 1
Chop the carrots and onions. Cook the rice
Step 2
Heat a pan and fry the onion and carrot. Once softened slightly, add the ginger, garlic, miso paste, applesauce, curry powder, turmeric and coconut milk and season with salt and pepper
Step 3
Butterfly the chicken breast and season with salt and pepper. Beat the egg and dip the chicken in, then coat in breadcrumbs. Air fry for 20 minutes, being sure to flip halfway
Step 4
Blend the curry mix in the pan until smooth, then cut the chicken into strips and serve with the rice and curry sauce
