Looking for a healthy curry? Look no further, try this healthy Sri Lankan Mutton curry!
Ingredients
Serves 2
400g lean diced lamb
1 onion
4tsp finely diced garlic
2tsp finely diced ginger
3 diced Thai chilli peppers
50g diced cherry tomatoes
2tsp Sri Lankan curry powder
1tsp mustard seeds
1tsp cumin
1tsp cardamom powder
100ml water
3tsp alpro soya coconut yoghurt
Method
Step 1
First, fry off your mustard seeds before then cooking the onion, garlic, ginger, and chilli, then add in your chopped tomatoes and the diced lamb
Step 2
Add in the curry powder, cumin, and cardamom and cook for approximately 4-5 minutes to sear the lamb, before adding the water
Step 3
Now add in the yoghurt and allow your curry to thicken
Step 4
Serve with your favourite rice and maybe some more yoghurt! Enjoy
