Method

Step 1

Peel the butternut squash and cut into small pieces. Season with salt, pepper, 10g curry powder and 0% fat yoghurt. Add butter to a pan and fry the squash

Step 2

Remove the squash from the pan and add star anise, cardamom pods, cumin seeds, fennel seeds, mustard seeds, curry leaves, finely chopped onion, finely chopped chillies, garlic and ginger. Add in the beans

Step 3

Add 15g curry powder, squash, passata and water. Mix in the coconut yoghurt and serve with rice
