High Protein Chana Masala

This veggie friendly high protein curry is a great midweek meal, full of delicious spices and flavours


Serves 4


Step 1
Drain and boil the chickpeas, then season with 2tsp curry powder and mix well. Chop the onion and chilli
Step 2
Toast the cumin, star anise, fenugreek and cinnamon in a dry pan, then add the onion, chilli and garlic and ginger paste once the spices are fragrant. Season with salt and pepper and cook until the onions are browned and softened
Step 3
Roughly chop the tomatoes and add to the pan to soften. Remove the cinnamon sticks and star anise and add a few chickpeas, then blend until smooth
Step 4
Add 2tsp curry powder and water to taste, then add the chickpeas and cover. Leave to cook until bubbling whilst you mix the yoghurt and milk, then add to the curry. Mix well, top with fresh coriander, serve and enjoy!
