Delightful honey parnsips, curried and full of protein.
Start by cutting your parsnips into chip shapes. Then, season with salt and pepper followed by two tsp of the high protein curry powder and honey. Mix well and place in the air fryer (in batches) for twelve minutes each at 200C
To a pan with a small amount of oil, add mustard seeds, cardamom seeds, star anise, cumin seeds, finely diced red onion, a halved chilli, curry leaves as well as ginger and garlic paste. Cook on low until everything is fragrant and the onion is soft
Add in more curry powder, then follow with passata and add the parsnips back in. Spoon in some coconut yoghurt and freshly chopped coriander. Serve and enjoy!
