Method

Step 1

Before frying your mince, cook your baked potatoes. These take anything from 30 to 35 minutes in a 200-degree celsius oven. When your potatoes are ready, remove them from the oven and set them aside for later, keeping your oven on

Step 2

Add your mince, garlic and ginger paste, and a little salt and pepper to a frying pan. Mix through to combine and cook, then add the curry powder, water, and coconut yoghurt. Stir to combine

Step 3

Add the 50% reduced fat cheese to the pan and mix through until combined. Get your potatoes from earlier, cut each one down the middle and top with the cheesy mince mix. Sprinkle the mozzarella over each potato before placing them in your oven for 10 minutes until the mozzarella is melted and gooey. Serve and enjoy!
