Start by cutting your aubergine in half, then season with salt, pepper and chilli powder. Bake in the oven at 190C for an hour.
Next, fry your mince. Season with salt, pepper, paprika and chilli powder
Remove aubergines from the oven. Scoop the insides of the aubergine carefully out. Add to the pan with mince. Add in the cheese, mix together and heat through. Carefully fill the aubergine back up, cover in more cheese and place under a hot grill for three-five minutes and serve
