Begin by seasoning you quorn chicken with olive oil and 2tsp high protein curry powder then place into the air fryer for 15 minutes

Next, dice your onion, chilli and half your tomatoes. Add the onion and chilli into a pan with the cardamom pods, cumin seeds, fennel seeds and star anise, and fry until the onion begins to soften, at which point go in with the garlic and ginger

After a couple minutes, add another 2tsp high protein curry powder, your tomatoes and water. Add your vegan chicken back in, let the water simmer and evaporate and finish with some Alpo soya coconut yogurt
