High Protein Vegan Keema Curry

Step 1

Dice the onion, chop the chillies and toast the cumin seeds, cardamom pods, mustard seeds, fennel seeds, fenugreek seeds and star anise in a large frying pan

Step 2

Add the chillies and onion to the spices along with garlic and ginger, then stir well

Step 3

Slice the tomatoes in half and add to the pan once the onions have softened. Add 2tsp curry powder, Quorn mince, milk alternative and 50ml of water and mix well. Allow to simmer for 5-10 minutes

Step 4

Add 2tsp curry powder and the yoghurt, then season with salt and pepper to taste, serve and enjoy!
