Method

Step 1

Break the cabbage into quaters, then rub salt into the quaters, making sure to get between all the leaves. Set aside

Step 2

In a pan, dissolve the rice flour and sugar in 1 cup of water over a medium heat

Step 3

Blend together the onion, ginger and garlic

Step 4

Mix the blended mixture into the rice flour, along with the fish sauce, green onion, red pepper flakes and gochujang.

Step 5

Rinse the salt off the cabbage leaves, then rub this mixture in. Pack the cabbage into a container and seal shut.
