Ingredients

Method

Step 1

Preheat your oven to 190C / 375F. Gently melt the coconut oil in a pan on a low heat with the maple syrup until combined, then remove from the heat

Step 2

In a bowl combine oats, coconut, sunflower seeds, pumpkin seeds, cranberries, chopped nuts, ginger, cinnamon and salt

Step 3

Pour your coconut oil and maple syrup into the bowl with the dry ingredients and mix really well - make sure everything is coated evenly

Step 4

Divide the mixture up evenly across 2 greaseproof paper lined baking trays and press down firmly with a spatula

Step 5

Place your trays in the oven for 10 minutes. Remove from the oven and give both trays a good mix around. Return to the oven for a further 5 minutes or until nicely golden brown - be careful not to burn. Remove from oven, mix, and allow to cool thoroughly before serving. Keep in a cool, dry place in an airtight sealed jar for up to 2 weeks
