Place a sliced onion, 2 slices of lemon and a bay leaf on a foil lined tray. Place the chicken on top, breast side up and cook for an hour at 350F. Ensure it reaches 165F

Roast some vegetables with olive oil and lemon pepper for 20 minutes. Serve with the chicken and enjoy
