Place a pot of water on to boil. Meanwhile, finely chop your garlic and saute it in a pan with the olive oil, then add the tomatoes and spinach and cook until the tomatoes start to release their juices
When the pot of water is water, add some salt and your pasta and cook per packet instructions. Add the hummus, the ladle of pasta water, lemon juice and zest to your tomato mixture and stir until combined and creamy
When your pasta is ready, transfer it to your pan with the sauce mix. Stir to make sure all the pasta is coated. Transfer to plates and it is ready to serve!
