Method

Step 1

Prep: Slice the tomatoes, mango and avocado. Grill or fry the halloumi

Step 2

Add half the lemon juice and 1tbsp olive oil to the kale and mix with your hands, massaging the kale to make it softer.

Step 3

Add the pomegranate seeds, tomatoes, mango, avocado and seeds and mix well

Step 4

Mix the peanut butter, soy sauce, honey, half the lemon juice and 1tbsp olive oil together to make the dressing

Step 5

Toss the dressing through the salad and serve topped with extra seeds and the grilled halloumi
