Great post-gym dinner. One for the gains


Serves 2


Step 1
Start by finely dicing and chopping your onions, celery and carrots
Step 2
Get your veggies frying on a medium-low heat taking care not to burn them. The aim is to sauté them until they are soft
Step 3
Once softened, scoop your veggies into a blender ready to blitz. Add in your garlic cloves, tomato sauce, salt and pepper. Whiz together to create a sauce

Next, finely chop thyme and coriander. Place your turkey mince into a bowl and add the fresh herbs in along with garlic powder, chilli flakes and a dash of olive oil. Using a wooden spoon, mix everything together well. Taking care to break the mince up

Then, set your pasta to boil
Step 6
Place your mince mix into a pan and begin to fry. Break up and ground with your wooden spoon
Step 7
Continue to fry until browned, when browned, pour over your tomato sauce mixture and allow to combine and heat up
Step 8
Once your pasta is cooked, spoon in one ladle of pasta water. Drain the rest of the pasta and add to the pan
Step 9
Grate a small handful of fresh parmesan into your pan and mix. Then, serve, and top with some more parmesan, and any remaining fresh herbs you have. Enjoy!
