Finely chop your parsley and mince your garlic. Grate your onion over a towel, then squeeze out all the moisture

Mix all of the ingredients together for 5 minutes till thoroughly combined, then cover and refrigerate for 5-7 hours

Portion the meat into 80g pieces, then squeeze onto pre-soaked wooden (or metal) skewers

Cook either over charcoal or under a grill on a low and steady heat, turning constantly. It should be cooked in a few minutes. Alternatively, you can bake them in the oven, by brushing with oil and cooking at 400 for 10 minutes. The final method is to pan fry them, by brushing a pan with oil, and putting them directly onto the heat, and turning every 1.5 minutes until cooked
