Delicious, moist and flavourful roast chicken with a tasty side of roast potatoes and carrots

Method
Step 1
Chop 5 sprigs of the rosemary, basil and thyme and mix with salt, mixed pepper, 1tbsp olive oil and lemon zest
Step 2
Lift the chicken skin up slightly and spread the herb mix underneath along with butter. Rub any remaining herbs on the outside
Step 3
Pierce the lemon and stuff inside the chicken before tying the legs together with string
Step 4
Chop the carrot and potatoes and peel the garlic before placing in a roasting dish with 2tbsp olive oil and 3 sprigs of rosemary, season with garlic powder, salt and pepper and toss well
Step 5
Bake all together at 180ºC (fan) for 1 hour and 30 minutes, serve and enjoy!
