These sweet and zingy tart is the perfect sweet treat to bring to picnics or serve with a cup of tea and good company

Method
Step 1
Preheat your oven to 350ºC/180ºC, then mix together the butter, ½ cup/100g sugar, 2 cups/270g flour and ½tsp salt until you have a smooth dough
Step 2
Press into a 9” pan and bake for 15-20 minutes. In the meantime, whisk together the eggs, 1 ½/300g sugar, ¼ cup/40g flour and the lemon juice until there are no lumps
Step 3
Pour the lemon filling into the pie crust and bake for 20 minutes. Top with powdered sugar, serve and enjoy!
