Ingredients

Method

Step 1

Par cook the lentils

Step 2

Chop the carrots, onion, fennel, celery and mushrooms

Step 3

Add oil to a pan and fry the mushrooms. Remove them from the pot then add onion, carrots, celery, fennel, chopped garlic and mixed herbs. Remove the vegetables from the pan once soft

Step 4

Add oil to the pot and brown the tomato puree. Add a can of crushed tomatoes ant the vegetables. Season as you wish

Step 5

Blend it all up. Add the mushrooms and lentils along with a splash of red wine

Step 6

Simmer for an hour (add water if it gets too dry). Enjoy!
