Score and salt the pork belly and refrigerate for 24 hours uncovered
Preheat your oven to 200ºC and roast the pork for 40 minutes on a wire tray on top of a deep baking tray. Turn the heat down to 180ºC, top up the bottom baking tray with water and keep cooking for 1 hour and 15 minutes
Boil the maple syrup, sriracha and butter in a saucepan for 2 minutes, then turn it down and baste the pork in the sauce on a baking tray lined with tin foil. Place back in the oven for 10 minutes, serve and enjoy!
