Ingredients

Method

Step 1

Heat the caster sugar in an oven at 20ºC/180ºC fan for 5 minutes until hot to touch. Meanwhile, separate the eggs and whisk the whites to stiff peaks

Step 2

Add the hot sugar to the egg whites a tablespoon at a time and whisk on high until thick and glossy and you can’t feel any grains of sugar between your fingers

Step 3

Zest the clementine and whisk into the meringue mixture

Step 4

Add a teaspoon of the mixture into 2 ramekins and colour one with red and the other with green food colouring

Step 5

Place a piping bag over a glass and paint stripes of each colour inside the bag before filling with the remaining white meringue mix and snip off the end

Step 6

Spoon a little bit of the mixture onto each corner of a baking tray and use to stick down baking paper and pipe out the meringue kisses. Bake at 90ºC/70ºC fan for 1 hour 30 minutes, serve and enjoy!
