Step 1

Remove the base of the chicken. Trim the wings

Turn the chicken over. Trim off any excess skin. Drizzle with olive oil, season with the sea salt and Montreal seasoning.

Grate the zest of a lemon on to the chicken. Bake in the oven at 200C for 35 minutes. Serve with roasted vegetables
