Step 1
In a pan over medium heat, begin by sweating down your onions then adding garlic in a touch of oil. Once softening and beginning to brown, add in the drained chickpeas
Step 2
Continue to fry to chickpeas and add in coriander powder and harissa paste. Continue to cook until the chickpeas have softened
Step 3
Add in the chopped tomatoes, combine with the chickpea mix, then add in chopped courgette and your spinach. Leave to simmer until the courgettes have softened
Step 4
Finally, crack over your eggs, and cook over a low heat for 5 minutes. Add a lid to the pan if you have one to ensure the tops of the eggs are cooked. Season with salt and pepper and enjoy
