Method

Step 1
Start by chopping your aubergine into rounds. Then peel and chop your potatoes into circles too.

Then in a pan on a medium heat, drizzle in olive oil and then place your aubergine in, turning over once golden. Remove from the pan and then follow the same steps with the potatoes. Set aside.
Step 3
Next, finely dice your red onion and garlic cloves. Fry these together with olive oil, and add in your minced beef. When browned, add in tomato paste and chopped tomatoes, as well as salt and pepper to your taste. Add in a cinnamon stick and bay leaves and leave to simmer on a low heat.
Step 4
In a baking dish, start by creating a layer of potato followed by a layer of aubergine. Then go in with a layer of minced meat mix, followed by potato and aubergine. Repeat until the dish is full. Follow steps on how to make a roux or cheese sauce, and pour this over. Bake in an oven for thirty minutes at 190C. Leave to rest for five minutes before serving.
