Preheat your oven to 180ºC. Spray a muffin tray with cooking spray and cut circles from the tortillas a bit larger than the holes in the muffin tray. Press the tortillas into the muffin tray to make “cups”, bake in the oven for 5 minutes and set aside
Step 2
Dice the onion and fry in olive oil until softened. Add the plant mince, garlic granules, onion granules, smoked paprika, oregano, chilli powder, salt and pepper, stir and cook on a medium-high heat for 5 minutes
Step 3
Add the chopped tomatoes, stir and cook for a further minute, then spoon into the tortilla cups
Step 4
Grate the cheese and sprinkle on top of the taco cups, then return to the oven for 5-10 minutes to melt the cheese. Top with fresh coriander, serve and enjoy!
