Oxtail Stew

Serves 4


Step 1
Start by drizzling olive oil into a deep and large pot. Place onto a medium heat and once warmed, add in your oxtail to brown
Step 2
Season your oxtail with salt and pepper and once browned, remove from the pan. Dice a white onion and immediately add that in to the same pan
Step 3
Get the onions frying and after a minute or so, add a tbsp of minced garlic, afterward, go in with a tsp of each of your seasonings. They are, thyme, rosemary, bbq and chilli flakes. Stir and let infuse over the heat
Step 4
Now, add your oxtail back into the pan
Step 5
Add in tomato paste, about one heaped tbsp. Optionally, add a dash of red wine in too
Step 6
Add a beef stock pot or cube and then cover the oxtail with water
Step 7
Now add in a few shakes of Worcestershire sauce. Roughly chop one carrot and add it in
Step 8
Cover with a lid and place in the oven at 170C for two and a half hours. Serve with mashed potatoes and enjoy!
