Serves 1


Step 1

Start by mixing the fish sauce, brown sugar, rice wine vinegar, soy sauce and tamarind sauce

Step 2

Soak the rice noodles in a bowl of hot water and slice the chicken and onion, chop the spring onion and peanuts and whisk the egg

Step 3

Heat sesame oil in a pan and fry the onion and chicken, stir until they’re browned

Step 4

Season with salt and pepper and add the ginger and garlic paste and stir. Move the chicken to the side and scramble the egg in the empty part of the pan before stirring in with the chicken and onion

Step 5

Add the noodles to the pan and mix before pouring in the sauce made earlier. Add the chopped spring onion and peanuts, beansprouts and lime juice, serve with extra spring onion and peanuts and enjoy!
