Paneer Salad with Mango & Chilli Dressing

Serves 2


Step 1

Peel the Mango and chop into pieces

Step 2

Add the mango to a blender with a chilli, 3tbsp apple cider vinegar, honey, 2tbsp olive oil, salt and pepper. Blend until smooth. Transfer to a jar and refrigerate

Step 3

In another bowl add the cornflour, turmeric, garam masala, paprika, garlic granules and cumin and mix together

Step 4

Cut the paneer into cubes around 2cm. Add the water into the spice mix and whisk into a batter. Add the paneer to the batter

Step 5

Heat a pan and add 1tbsp olive oil. Add the paneer and cook on each side for 2 minutes

Step 6

Add the salad to a bowl along with red onion, 1tsp apple cider vinegar, 1tbsp olive oil, salt and 1tbsp lemon juice. Give the salad a toss

Step 7

Serve, add salad to a plate, scatter the paneer cubes around the edges. Add mango dressing droplets on top of the paneer and in between. Serve and enjoy
