Method

Step 1

Start by heating some olive oil in a large frying pan and add in some diced onion, diced celery and diced carrot. Stir and fry for around 5 minutes to soften and then add in diced garlic and continue to fry for a further 2 mins

Step 2

Add in beef and pork mince and break down with a spatula. Season with 1/2 tsp salt and pepper and continue to fry for around 5 minutes until the mince is browned. Add balsamic vinegar and deglaze the bottom of the pan, then add peeled plum tomatoes and half a tin of water. Break the tomatoes down with the spatula and stir everything together. Leave to simmer on medium heat for 25-30 mins until the sauce has reduced down

Step 3

Boil water with 2tsp salt and add your pasta of choice. Boil for around 8 minutes and then drain, reserving a small amount of pasta water. Add the pasta water into the bolognese sauce, followed by the drained pasta. Stir through over low heat before serving into four equal portions and topping with some fresh basil
