These mushrooms taste like the real thing, who said that veggies had to miss out?

Step 1
Boil the pasta and slice the mushrooms into discs and fry in olive oil on a medium high heat until golden brown, season with salt and pepper and set aside
Step 2
Dice the shallot and sauté in the same pan with white wine and let it reduce by half (and not by drinking it). Add the butter, thyme, garlic and the juice from the lemon
Step 3
Add a cup of the pasta water and the pasta about 2 minutes before it’s finished cooking. Add as much grated cheese as you would like and you’re ready to serve with your mushroom “scallops”
