Step 1
Start by cooking your pasta, reserve some of the pasta water in a mug for later on.
Step 2
Secondly, blanch your spinach and cook your peas. Then, place both into a food processor along with feta, walnuts, basil, olive oil, the juice of one lemon, garlic cloves and that reserved pasta water. Whiz together into a thick paste
Step 3
After blending, place into the pan with some oil and fry off, add some water to make it into a looser sauce. Next, add in your cooked pasta and combine with the pesto. Season well with salt and pepper and then serve with some concentrated pesto dolloped on top. Finish with more fresh basil and feta and enjoy.
