Serves 4


Step 1

Bring salted water to the boil and add your raw pasta. Cook for about 8 mins and then drain, reserving some of the pasta water for later. Dice the shallot and the garlic and crush the whole peppercorns. You want them to be roughly crushed, you can leave a few whole ones

Step 2

Heat the butter in a large pan and add the diced shallot. Fry for about 3 mins and then add in the diced garlic, frying for another 2 mins

Step 3

Now add in the crushed peppercorns, brandy, cream, mustard and crumble in the beef oxo cube. Finally, pour in the reserved pasta water

Step 4

Let that simmer on medium for about 10 mins to reduce down nicely and thicken

Step 5

Finally, add in the frozen peas and the drained pasta and stir over heat for a few mins to fully combine. Serve into four equal portions and garnish with freshly chopped parsley
