Method

Step 1

Start off by dry frying your pine nuts. They cook fast so keep a close eye on them until they are beginning to colour

Step 2

Next, place a large clove of garlic into a processor along with the juice of 1/2 lemon

Step 3

Add in a pinch of salt and, once cooled, go in with your pine nuts too

Step 4

Finally, tip in your parmesan cheese, basil, and a couple healthy tablespoons of olive oil

Step 5

Place on the processor lid and blend, to loosen the consistency add more olive oil, or adjust quantities to suit your taste
