Method

Step 1

Cook the dry pasta in water with 2tsp salt for about 10 minutes. One cooked, drain the pasta and rinse with cold water. Dice the red onion and half the cherry tomatoes

Step 2

Once the pasta has cooled down, spoon in pesto and season with 1tsp salt, pepper and smoked paprika

Step 3

Now add the diced red onion, cherry tomatoes, sweetcorn and mozzarella balls

Step 4

Mix together and ladle into 4 equal portions
