Peel and cut up the potatoes and add to boiling salted water

Add a teaspoon of Dijon mustard to each steak and spread over the surface. Sprinkle a teaspoon of brown sugar over each steak

Add the steaks onto a grill tray and place under a grill at 160C for around 10-15 mins

Remove the core of the apple and using a mandolin or sharp knife thinly slice the apple and place into a bowl with water and lemon juice to stop the apple from going brown

Turn the steaks over and cook for another 10 mins. Don’t worry if the toppings slide off

Once the potatoes are soft drain off the water and return to the same pan. Add 30g salted butter, wholegrain mustard, salt and milk. Mash until smooth

To a frying pan add 40g butter and 2tbsp of soft brown sugar. Gently heat and stir until sugar has dissolved. Add in the apple and coat and cook for 5 minutes
Step 8
Remove steaks from the grill and turn them again. Add the sliced apple and spoon over the sugar syrup and place the steaks back under the grill until the apples are caramelised
Step 9
To plate, add mustard mashed potatoes to the plate and place the steak onto the mashed potatoes. Serve with sides of choice and enjoy
