Drain the jackfruit and pull apart in a bowl, then add paprika, garlic powder, onion powder, ground cumin seeds and ground coriander seeds. Add olive oil and mix well, then cover and set aside to marinate for at least 20 minutes or up to 24 hours
Chop the onion, then caramelise in a pan. Add the jackfruit and BBQ sauce, stir well and allow to cook until reduced
Warm the tortillas in a pan, then fill with the jackfruit. Top with coriander and onion, serve with guacamole and enjoy!
