My take on puttanesca is a low fat/calorie idea thats super quick to make. You don't have to be a fish lover, give it a go!
Start with a touch of olive oil in a frying pan over a low heat. Add in the anchovy fillets and fry for a minute. At the same time begin to cook your spaghetti and place some garlic bread into the oven or air fryer
Then, after a minute of cooking your anchovies add in the sliced red onion and butter and continue to fry until softening
Now, add in your tomato sauce along with chilli flakes and capers and bring to a low simmer
Now add in your olives and some pasta water if you need to loosen the sauce at all. Add in your cooked spaghetti and combine well
Once combined, move to a plate with the garlic bread and top with your parmesan cheese
