Serves 1


Step 1

Start by shaving off the skin of your beetroot. Then, using a mandolin, slice it in to thin pieces. Stack the pieces of beetroot on top of one another then cut down to create sticks of the beetroot

Step 2

Repeat the process with the radishes, cut your carrot into thin strips, chop half a cucumber into strips, then small pieces, and lastly your cabbage

Step 3

Next, add half a cup of quinoa and your sliced avocado

Step 4

To make your tahini dressing, combine tahini, white wine vinegar, olive oil, lemon juice, chilli flakes, salt and pepper in a bowl and combine well. Pour over your salad and enjoy the rainbow!
