Method

Step 1

Wash the broccoli in a bowl with water and distilled vinegar, then finely chop

Step 2

To a dry frying pan, add pumpkin seeds, almonds and pistachio and cook until browned and toasted

Step 3

Add olive oil, 2-3 mint leaves, ginger, lime juice, Himalayan salt, erythritol and rice wine vinegar along with optional bird’s eye chillies and blend well

Step 4

Chop the dates, 4-5 mint leaves and coriander. Mix the broccoli, nuts, dates, mint, coriander, salt to taste, and dressing in a large bowl, then top with pomegranate seeds, serve and enjoy!
