30 minutes before you want to eat, take the steak out of the fridge and give it a good seasoning on all sides with salt and pepper

Add your goose fat to a pan over a high heat. When piping hot, sear the steak on one side for 2 minutes, sear the fat on the side, and then sear on the other side for another 2 minutes

Take the steak off the heat, and turn down the heat to low. Chuck in the shallots, garlic, butter, rosemary, fresh thyme
Step 4
Add your steak back into the pan, and baste on each side for 30 seconds for a medium rare. Make sure you rest for at least 5 minutes
