Method

Step 1

Crush the garlic in a pestle and mortar before adding and crushing the coriander seeds, pepper, salt and oil

Step 2

Chop the rosemary sprigs into small pieces

Step 3

Pour the garlic and herb paste over the lamb and rub in well before topping with rosemary, wrapping in tin foil and leaving to marinate overnight in your fridge

Step 4

Bake at 200ºC for 1 hour still in the foil and 1 hour and 15 minutes uncovered. Serve and enjoy!
