Preheat your oven to 180°C., Start by drizzling 2 tbsp of olive oil into a medium hot pan and then adding in some sliced onion, bell peppers and diced garlic

Stir and fry for about 6 mins to soften and then transfer into a blender

Then spoon in the peeled plum tomatoes, followed by a handful of fresh parsley and 1/2 tsp of salt and pepper before blending to make a sauce

Then prep the rest of the vegetables by slicing some courgette, summer squash, aubergine and tomato into thin slices

Then grab a tray and spoon in a nice layer of the sauce you made earlier before layering in all of the veg made earlier

Finally, drizzle over another 1 tbsp of olive oil and season with the remaining 1/2 tsp of salt and pepper before covering with baking paper and placing in the oven at fan 180°C for 45 mins. Enjoy!
