Salmon and Avocado Pasta Salad

Serves 1


Step 1

Bake two salmon fillets in a preheated oven at 180 degrees Celsius. Bake for 8-10 minutes

Step 2

While the salmon is in the oven, boil the pasta (check packet for time needed). Once the pastas cooked, drain it, and run it under cold running water until its completely cooled

Step 3

Add the pasta to a large mixing bowl with mayonnaise, spring onions, and cherry tomatoes. Give it a mix

Step 4

Add the zest and juice of 3 limes to give it a zingy flavour

Step 5

The salmon should now be done. Flake the salmon and add 2/3 of it to the mixing bowl along with two sliced avocados and a handful of rocket

Step 6

Mix up until well combined, then plate the pasta mix over a bed of rocket leaves and finish with the last 1/3 of salmon
