Method

Step 1

Start by boiling your water, and then poaching your eggs for four minutes. Slice your avocado up and set aside.

Step 2

Toast and butter your sourdough. Layer on your avocado and smoked salmon generously. Then, once your eggs are poached place on top. Follow with curly spring onion, the juice of half a lemon, a lemon wedge and some balsamic glaze if you're feeling fancy. Enjoy!
