Method

Step 1

Fry off the onions, shallots and garlic till fragrant, then stir through the chillies and pepper and allow to fry for 2-3 minutes.

Step 2

Add the tomato paste, allow to colour, then the tomatoes, and bring to a simmer.

Step 3

Sprinkle in all of the spices, combine fully, then drop the eggs into the sauce one by one.

Step 4

Put on a lid and allow to simmer for 10-12 minutes, then garnish with chopped parsley and enjoy!
