Begin by finely chopping your chicken, then creating the marinade.

Add the shaoxing wine, oyster sauce, light soy and cornflour to the chicken and stir well. Set aside in the fridge to marinate for fifteen minutes

Finely chop four cloves of garlic, chilli and ginger and place into a jug. Add a tbsp of sesame seeds

Cook your chicken in boiling water, begin to cook your noodles however the packet instructs

Roughly chop some coriander to garnish

Add a tsp of chilli flakes into the jug, and then get some oil piping hot in a pan. Once hot, pour the oil into the jug and stir everything together. Finally add oyster sauce, light soy and a pinch of salt and mix together some more.
Step 7
Drain your chicken, set your noodles on the plate and top with the chicken. Then pour over the hot oil sauce, and garnish with a small pinch of chopped coriander.
