Method

Step 1

Preheat oven to 350Β°F. In a bowl add 100g sugar, eggs, vanilla extract, 225g melted butter, vinegar, apricot jam and milk

Step 2

Whisk the ingredients together then sift in flour, salt, baking powder and soda in the wet batter

Step 3

Whisk again until well combined. The consistency should look like pan and batter (quite runny). Pour the batter in a greased cake pan (11” x 7”) and bake for 30 minutes

Step 4

Combine cream, butter and sugar in a medium saucepan on the stovetop on medium heat and whisk constantly until the sugar is all dissolved. Set aside

Step 5

Once the cake is out of the oven and fully cooked, poke holes throughout the top of the cake with a fork, then pour the cream mixture all over the cake. It may look like a lot, but it will absorb quickly. Serve as is or serve with ice cream or custard
