Method

Step 1

Soak the ham for around 30 minutes, then pat dry. Heat a cast iron skillet to a medium heat

Step 2

Chop the mushrooms, then heat 2 frying pans with 1tbsp butter in each. Fry the spinach in one and the mushrooms in the other. Season the spinach with lemon juice, salt and pepper

Step 3

Melt 1tbsp butter in a pan and scramble the eggs to taste. Fry the ham in your cast iron until crispy

Step 4

Toast the English muffins, then top with ham, spinach, eggs and mushrooms. Serve and enjoy!
