Preheat the oven at 180C. Add an onion, chilli, 3 garlic cloves, 1tsp basil and 1tsp oregano to a chopper/ blender and chop until smooth.
Add the minced beef, the chopped ingredients, breadcrumbs, eggs, 1tsp salt and 1tsp pepper to a bowl and mix well
Once mixed form into 20 meat balls and place onto a baking pan. Place into the oven, cooking until browned. Turn occasionally
Add the 1tbsp olive oil to a pan along with the 1 chopped onion and sauté until translucent. Add chilli flakes, 1tsp basil, 1tsp oregano, tomatoes, tomato paste, passata and nduja paste. Cook for 10 minutes and allow to simmer for 5 minutes
Add in the cooked meatballs, mix into the sauce and allow to simmer. Add in parmesan, 1tsp salt and 1tsp pepper
Place the garlic subs onto a flat surface. Add on a layer of rocket leaves and 3/4 meatballs. Cover the meatballs with two slices of gouda and place back under the grill until the cheese melts. Remove from the grill and spoon over some of the sauce. Enjoy!
