Wash and boil the lentils for 15-20 minutes until cooked. Remove any excess foam

Fry the mustard seeds, onions, thai chillies, garlic, crushed black pepper and curry leaves on a medium-high heat in a little oil

Season the lentils with salt, pepper and turmeric. Add the remaining ingredients from the frying pan and mix together. Let simmer on a low heat. Finish with a dash of single cream and serve!
